St. Patrick’s Day Snack Mix- Leprechaun Bait Muddy Buddies Recipe

I’ll lead into this recipe by telling you that it would totally work great as Leprechaun Bait. However, I have to follow that statement up by telling you that this snack mix is SO extremely tasty, you probably won’t have any left over to leave out for the leprechauns. This snack mix offers the perfect blend of salty and sweet – which is definitely my absolute favorite taste combo.
If you try this recipe and it’s a hit with your family, know that you can change it to match any color scheme or holiday theme. Just change up the candy melt colors and sprinkles.
We whipped up a batch of this snack mix with St. Patrick’s Day in mind, so our theme was green with a dash of yellow (gold). Another great thing about this recipe is that you can make it in small amounts or in bigger batches to feed a crowd.
Leprechaun Bait Snack Mix Ingredients
The ingredient amounts below make approximately one baking sheet’s worth of snack mix.
1/2 C popcorn kernels (to be popped)
2 C Rice Chex Cereal
1/4 C white candy melts
1/4 C green candy melts
Sprinkles
How to make Leprechaun Bait:
1. Pop the popcorn. I use my Whirly Pop to make popcorn – LOVE it!
2. Add popped popcorn to a large bowl.
3. Add Rice Chex Cereal to the bowl and stir gently to combine.
4. Melt each color of candy melts. I typically place the melts in a bowl and microwave them at 15 second intervals. Stir after each 15 minute interval until fully melted. Add melted candy by spoonfuls to the snack mix.
5. Gently stir the ingredients together until the melted candy has coated much of the popcorn and cereal.
6. Spread the snack mix on a baking sheet lined with parchment or wax paper.
7. Sprinkle some sprinkles over the mix.
8. Let the mix sit for 20-30 minutes to allow the candy to harden. At this point, the snack mix is ready to serve! If you are not enjoying the mix immediately, store it for up to a few days in an air-tight container.
