Shamrock Pound Cake

Oooooo!  I have have had my sights set on a shape-inside-bread recipe for months now.  This morning was our first horse show of the year and we had a breakfast potluck tailgate.  It was the perfect excuse to try this one out.  It turned out to be a whole lot easier than I had thought.  There is a fairly lengthy amount of time needed to bake this bread, but the actual prep time only took a few minutes.

You can certainly use a from-scratch pound cake recipe.  I was looking for the easiest route possible, so I opted for two boxes of Betty Crocker Pound Cake mix.

You will need:

Box of Pound Cake Mix + required ingredients per box’s instructions

Green food coloring

Shamrock cookie cutter

(For Glaze) 1 Cup confectioners sugar + 6 tsp 2% milk

How to make:

1.  Preheat oven to 350 F.

2.  Prepare ONE of the boxes of mix, as directed on the box.

3.  Add several drops of green food coloring and stir until all of the batter turns green.

4.  Pour batter into a greased loaf pan and bake as directed on the box.  (Mine baked for approximately 50 minutes.)

5.  Remove from oven and let cool completely.

6.  After the green loaf has cooled, slice into 1 inch thick slices.  Use shamrock cookie cutter to cut out a bunch of shamrocks.

7.  Spray loaf pan with non-stick cooking spray.  Line up the shamrock cutouts that you made on the bottom of the pan.  They should touch each other and span the length of the pan.  Set aside.

8.  Prepare batter from the second box of pound cake mix.  Carefully and slowly pour the 2nd batch of batter on top of the shamrocks.  I used a spoon to first fill in the sides and then drizzled batter on top.  I filled the pan a little more than half way with batter.

9.  Bake according to the directions on the cake mix box.  My pound cakes (I made two loaves) took about 45 minutes to bake.

10. Remove from oven and let cool.

To make glaze:

Mix 1 cup of confectioners sugar with several teaspoons of milk. I used approximately 6 tsp of milk.  Add milk until you reach your desired consistency – mine was fairly watery.

Drizzle glaze over pound cake so that it drips over the sides.
