Are you looking for a sweet, single-serve dessert to make that requires minimal prep? These sugar cookie mini fruit pies are just the answer! They taste delicious and look amazing!

Sugar Cookie Fruit Pies HERO

A few years ago I posted this very popular recipe for a sugar cookie fruit American Flag treat. We love making that dessert for summer BBQs and today’s treats have a similar taste. Instead of frosting on top, we opted for a lighter base by using a whipped topping (like Cool Whip).

These mini “pies” are really sugar cookies topped with whipped topping and fruit. They taste absolutely delicious and by using sugar cookies, they make a great individually portioned treat.

Easy to prep ahead of time: These mini pies are easy to prep ahead of your party or event. Simply bake the cookies up a day or two before. All that is left is to cut up the fruit and top the cookies.

Perfect for kids to “decorate:” You can also set up this dessert as a “DIY” toppings treat. Set out the whipped topping, cookies and cut fruit and kids (or adults!) can finish their own dessert.
