We’re always on the hunt for simple, delicious dinners that don’t leave the kitchen looking like a tornado hit it. Enter: Sheet Pan Fajitas! This one-pan wonder is bursting with flavor, light on prep, and even lighter on cleanup. It’s a perfect option for busy weeknights, whether you’re juggling homework, practices, or just trying to keep everyone fed before bedtime.

You only need a handful of ingredients to bring this dish together – and chances are, you’ve already got most of them in your kitchen!
Ingredients:
- 1 Onion
- 1 Green Pepper
- 1 Red Pepper
- Limes
- 1/2 Cup Shredded Cheese
- 8 oz Pre-Cooked Chicken Breast
- Tortillas
Note: feel free to swap uncooked boneless skinless chicken tenderloins in place of the the pre-cooked chicken. Drizzle some extra virgin olive oil over the chicken and veggies and roast in the oven for 45-60 minutes at 350°F. (Until the chicken is fully cooked.)

Instructions:
- Preheat your oven to 350°F.
- Add the chicken to a sheet pan.
- Slice up your onion and peppers, then spread them across the sheet pan.
- Bake everything for 12 minutes.
- Remove the pan from the oven and give it a fresh squeeze of lime juice.
- Sprinkle shredded cheese over top.
- Serve it all up with tortillas and enjoy!

Optional but delicious: Add sour cream, salsa, or guacamole on the side for dipping and extra flair!
