Thanksgiving is just around the corner, and I have just the snack to put the “WOW” in your holiday menu. It’s a fun, creative, and tasty snack that will have everyone talking (and munching!) at your gathering. This easy-peasy Thanksgiving-themed treat masquerades as adorable mini slices of pumpkin pie.
But here’s the twist: they’re made entirely of cheese, cream cheese, pretzels, and crackers! Whether you’re looking for the an easy appetizer or the perfect party finger food, these cheese and cracker “pies” are sure to charm your guests.
So, gather the kiddos around, because this is such an easy snack to make, they can definitely help! Let’s dive into this easy app. You’ll be creating these “pumpkin pie” slices in no time.
- Triangle Crackers (These will be the base of our “pies”)
- Cheddar Cheese Slices (For the “pumpkin filling”)
- Cream Cheese (Our “whipped cream” and “glue”)
- Pretzel Sticks (The perfect “crust” for our pie)

Step 1: Craft Your “Pumpkin Filling“
Take those cheddar cheese slices and, using a triangle cracker as your template/guide, cut them into triangle shapes. This will be the “filling” of your pie, so you want to get the size just right – not too big, not too small, but a perfect fit on top of your cracker “crust.”
Step 2: Assemble the “Pie“
Here’s where the cream cheese comes into play. Spread a thin layer of cream cheese onto each triangle cracker to act as the glue that will hold the cheese to the cracker. Then, carefully place your cheddar cheese slice on top.
Step 3: The “Crust”
No pie is complete without a crust! Grab a pretzel stick for each “pie slice” and cut it down to the right size if needed. Then, dab a little more cream cheese along one side and stick it to the wider end of your cheese-covered cracker. Just like that, you’ve got a deliciously crunchy “crust!”

“Pumpkin Pie” Cheese and Crackers
- 1 knife
- 1 plastic sandwich baggie
- 1 serving tray
- Triangle-shaped crackers
- Cheddar cheese slices
- Pretzel sticks
- Cream Cheese
- Using a cracker as a template, cut the cheddar cheese into triangle slices.
