Peeps Egg Surprise Cupcakes
I don’t know about your house, but over here, it’s just not Easter until Mom (er, me) decorates something with Peeps. Be it food or decoration, Peeps Chicks or Peeps Bunnies, I can’t seem to refrain from using Peeps to add to our Easter festivities. Another cool fact – Peeps are actually very local to us, made in Bethlehem, PA!
The inspiration for this year’s treat comes straight from the kitchen maven herself, Betty Crocker. I saw these cupcakes one day while scouring Pinterest and I knew I had to make them. The kids are going to LOVE the surprise inside!!
Here’s what you need to make these treats (which I promise, are a LOT easier to make than they might appear)!
:: Cupcakes (baked, not frosted)
:: Can of frosting (any color you’d like)
:: Peeps Chicks (any color you’d like)
:: Sprinkles (seasonal colors are fun!):: Cadbury Mini Eggs (one per cupcake)
:: Small circular cookie cutter
:: plastic sandwich bag
How to make:
Hollow out a small space in the top of each cupcake. I used a small circular cookie cutter and the cake lifted out with the cutter. Make sure you leave the bottom of the cupcake uncut.
Add a layer of sprinkles to the cupcake well. Place a Cadbury Mini Egg on top and continue adding sprinkles until the well is filled to be level with the cupcake top.
Add frosting to a plastic sandwich bag and snip the end off one corner to make a simple piping bag. Frost the top of the cupcake. Design doesn’t matter too much – you will be placing a Peeps Chick on top.
Top your finished cupcake with a Peeps Chick! Now, these are completely cute on their own…
But the real kicker, of course, is when someone bites into them!
