Overnight oats are one of my go-to breakfasts because they taste great and can be made it a variety of flavors. They do take a little bit of prep time, but this is done the day before you intend to eat them. That makes them a filling, grab-and-go meal and I love knowing exactly what ingredients are in the jar. Check out this recipe for a peanut butter banana version of overnight oats.
Overnight Oats for a Quick, Make-Ahead Breakfast
I have to admit: I used to hate overnight oats. I liked the taste and I enjoyed the texture of oatmeal. However I could not get used to the COLD temperature. Overnight oats are prepped the night before you want to eat them and sit in a jar or container in the refrigerator. Thus, the next morning they are nice and chilly.
Well, two things have happened since: some mornings I actually enjoy the cold oats (especially on a hot summer morning). And guess what else? You can totally warm up overnight oats with a quick spin in the microwave! I was a couple dozen jars into my oats adventuring before it dawned on me to heat them up! LOL Anyway, problem solved.
This version combines peanut butter and bananas in a tasty flavor combination. It is also a great way to use up the inevitable overripe banana (or three) that shows up on your kitchen counter!
Peanut Butter Banana Overnight Oats
Let’s get going! I usually make overnight oats in a pint-sized mason jar, but any similarly sized jar or lidded container will work great.
Peanut Butter Banana Overnight Oats
Equipment
- 1 pint sized jar with lid
Ingredients
- 1/2 cup old fashioned rolled oats
- 1/2 cup almond milk (or milk of your choosing)
- 1/8 tsp salt
- 1 tsp monkfruit sweetener (or sweetener of your choosing)
- 1 small ripe banana (the riper the better!) mashed
- 1 tbsp peanut butter
- 1/2 tsp vanilla extract
- coarsely chopped peanuts (or nuts of your choosing)
Instructions
- Add all ingredients to the jar and mix until combined.
- Place lid on jar and set jar in the refrigerator overnight.
- Remove from the refrigerator in the morning and eat cold or remove the lid and microwave for about 1 minute to warm it up.
- Enjoy!
You can experiment with this basic recipe and try other flavor combinations. I also love using PB2 peanut butter powder (regular or also the version with cocoa!) sometimes, instead of peanut butter.
