Mini Turkey Meatloaf
This super easy Mini Turkey Meatloaf recipe tastes great and is perfect for lunch, dinner and meal prepping. The ingredients are also all 21 Day Fix compliant.
The entire family scarfed these mini meatloaves down for dinner tonight. We enjoyed them with quinoa and broccoli on the side for a flavor-filled meal.
If you are following 21 Day Fix, this recipe uses all Fix-approved foods and can be counted as: 1 red (for 2 mini meatloaves).
You will need:
- 1 lb lean ground turkey (or chicken or beef)
- 1 small yellow onion (chopped)
- 1 green pepper (chopped)
- 1/2 cup tomato sauce (sugar free if possible)
- 1/2 cup rolled oats
- 1 egg
- Salt, pepper, garlic powder, to taste
- Non-stick cooking spray
How to make:
Preheat oven to 350 F.
Mix all ingredients in a bowl. Save a little tomato sauce to top the loaves.
Spray a muffin tin with non-stick spray and fill 10 cups with turkey mixture.
Top each cup with remaining bit of tomato sauce.
Bake for 30 minutes at 350 F.
