What’s better than a cupcake? A JAR full of delicious pumpkin spice cupcake, layered with sweet frosting, and topped with whipped topping, walnuts, and warm caramel sauce. You HAVE to try these mason jar pumpkin spice cupcakes!
While I firmly believe that cupcakes taste good ANY TIME of the year and on any given day, I will go out on a limb and say that these sweet desserts taste especially amazing during those crisp, cool months of fall. If you live anywhere that experiences a true autumn – temps dropping, leaves changing, humidity taking a hike – you know what I’m talking about. Those months just FEEL like pumpkins, apples, and caramel. This amazing recipe will take care of two of those three flavors!
This is purely personal preference, but I also have a strong affinity for just about any treat served in a mason jar. I love the portability and the classic look. Mason jar desserts are always great options for party menus. Guests can grab a pre-portioned, portable dessert and enjoy it while socializing with friends.
The pumpkin spiced accents in this recipe, along with a perfectly paired cream cheese frosting, make it an instant winner for your next fall fest, bonfire, halloween party, etc.
Mason Jar Pumpkin Spice Cupcakes Ingredients
1 box 16.5 ounce white cake mix
1/2 c granulated sugar
15 oz canned pumpkin
1/2 c vegetable oil
4 egg whites
1 tsp cinnamon
1/4 tsp allspice
1/4 tsp ground cloves
8 oz cream cheese, room temperature
4 c powdered sugar
3/4 c heavy cream
2 tsp vanilla
optional toppings – whipped topping, walnuts, caramel sauce
How to Make Mason Jar Pumpkin Spice Cupcakes
1. Preheat oven to 350 degrees.
2. Add the following ingredients to a large mixing bowl: cake mix, sugar, pumpkin, vegetable oil, egg whites, cinnamon, allspice, ground cloves.
3. Mix ingredients together on low speed until well combined.
4. Spray 24 muffin tin cups with cooking spray (or you can use cupcake liners). Fill each cup just over half full with batter.
5. Bake for 18-20 minutes, or until a toothpick inserted in the middle of a cupcake comes out clean.
6. Remove cupcakes from the oven and let cool completely.
7. In a medium mixing bowl, cream together cream cheese and 2 cups of the powered sugar.
8. Add the heavy cream and vanilla. Mix until combined.
9. Continue mixing, adding in the remaining 2 cups of powered sugar a little bit at a time. Mix until well blended.
10. In small mason jars or dessert bowls, layer in the following order: one cupcake, 1/4 cup frosting, another cupcake. Note: if you are using small jars/dishes, you can use half of a cupcake on the bottom, a dollop of frosting, then top with other half of cupcake.
11. Top with whipped cream, walnuts and caramel sauce (optional).
