Lemon Dill DUMP CHICKEN Slow Cooker Recipe
If you need tasty, easy and quick when it comes to dinner, look no further. We had some extra boneless chicken breasts last week and I wanted to turn it into a couple of freezer meals that could be dumped into the slow cooker on our busier weeknights.
The nice thing about this meal (besides the fact that it’s delicious and cooks itself) is that you can simply multiply the recipe if you need more portions. The recipe below makes enough for dinner for Bob, myself and the 2 kids… with a smaller lunch-sized portion leftover. We typically serve this chicken with rice or pasta and a veggie.
You will need:
:: 4 boneless skinless chicken breast halves (whole or cut into tenders)
:: 1/8 C extra virgin olive oil
:: 1/2 TBSP dill seasoning
:: juice from 1/2 of a lemon
:: 1 – 2 TSP minced garlic (depending on how garlic-y you want the taste)
How to make:
Here comes the fabulocity (real word) that the name DUMP CHICKEN implies… to make this dish…
1) Place chicken in a gallon Ziploc freezer bag. I like to label my bags with a Sharpie marker before putting food in them.
2) Mix all other ingredients in a measuring cup or bowl.
3. Dump all ingredients into the bag with the chicken.
That’s it!
Throw in the freezer until you’re ready to enjoy!
To cook:
I usually pull the bag out of the freezer the night before I am planning to cook it and leave it in the refrigerator to defrost. The next day I throw the contents of the bag into my slow cooker on low around noon. By dinnertime (around 6 pm), the meal is finished and ready to be devoured!
