Ingredients You’ll Need

  • 3 lb Yukon Gold potatoes: Peeled and sliced into ¼” slices
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 cup cream of chicken soup
  • 1 cup water
  • 1 cup heavy whipping cream
  • 2 cups white cheddar cheese: Shredded
  • ½ cup sharp cheddar cheese: Shredded

Directions

Step 1: Prep the Potatoes

  1. Add 1 cup of water to your Instant Pot and place the peeled and sliced potatoes inside.
  2. Set your Instant Pot to Manual High for 1 minute.
  3. Once the timer beeps, perform a Quick Release of the pressure.

Step 2: Assemble and Sauté

  1. Preheat your oven broiler to high.
  2. Carefully remove the potatoes from the Instant Pot and arrange them in a baking dish.
  3. Set your Instant Pot to sauté mode.
  4. In the pot, combine 2 cups of shredded white cheddar cheese, 1 cup of heavy cream, 1 cup of cream of chicken soup, salt, and pepper.
  5. Stir continuously until the cheese has fully melted and the sauce is creamy and smooth.

Step 3: Get Cheesy

  1. Pour the melted cheese mixture over the potatoes, ensuring every slice is coated.
  2. Sprinkle the shredded sharp cheddar cheese evenly on top.

  1. Place the baking dish under the broiler for 3-5 minutes or until the cheddar cheese on top is melted, bubbly, and golden brown.
  2. Remove from the oven and let it cool slightly before serving.

  • Peel and cut potatoes and add them to the Instant Pot along with 1 cup water.

  • Carefully remove potatoes from Instant Pot and arrange them in a baking casserole dish.
  • Set Instant Pot to sauté mode.
  • Add the following to the Instant Pot: white cheddar cheese, heavy cream, cream of chicken soup, salt and pepper.
