I posted my grandmother’s pumpkin bread recipe which our family looks forward to each and every year! I usually make several batches of that recipe the week before Thanksgiving. My mom used to do the same thing, as did her mom (my grandmother) before her. We make up lots of pumpkin bread and in addition to enjoying in on Thanksgiving, we freeze lots of loaves to enjoy over the winter. The only drawback to that recipe is that it is very time consuming.
The scratch recipe takes time and requires a bunch of ingredients.

Cake Mix Chocolate Chip Pumpkin Bread Recipe
Ingredients
- 15 oz box spice cake mix
- 15 oz can of pumpkin
- 2 cups chocolate chips
Instructions
- Preheat oven to 350F.
- In a mixing bowl, add all ingredients (cake mix, chocolate chips, pumpkin). Mix until combined.
- Fill a greased or parchment paper lined bread pan with the batter.
- Bake for 40-45 minutes, or until an inserted toothpick comes out clean.
- Serve and enjoy!

This bread is rather dense for my liking.. To help lighten it up, simply mix in an egg with the other ingredients. It makes a drastic difference.
In reading the recipe I thought it would be dense as well so I added 1 egg and 1/4 cup of oil before I came across your comment. I agree, the egg makes a difference and my coworkers loved it. So today I’m making mini loafs to share at Thanksgiving.
Wish I read about adding an egg and oil . Very dense. Not bad but not great either .
