Baked Buffalo Chicken Blue Cheese Crispers

If you love a tasty buffalo chicken treat, you are going to LOVE these delicious Baked Buffalo Chicken Blue Cheese Crispers.  The chicken skin is used for the outer “shell” and the entire treat is bursting with flavor.  These make perfect game day or party apps!

We LOVE cooking up tasty dishes that feature buffalo-style chicken.  I am, admittedly, a bit of a wuss when it comes to the actual spicy heat of buffalo chicken, but there are so many delicious wing sauce varieties that come in a mild version.  If you like to turn the heat up on a traditionally spicy dish, go for it!  You can really cater this meal to individual preferences.

Over the years, we have posted several other buffalo chicken dishes.  The most popular are the warm buffalo chicken dip (OMG so good) and the buffalo chicken pizza (OMG also so good).  Make sure you check them out and give them a try.

For today’s Baked Buffalo Chicken Blue Cheese Crispers recipe, you can make them up ahead of time or make them right before meal time.  They also make a great party appetizer or game day food. The flavor packed inside these crispers is AMAZING!

Baked Buffalo Chicken Blue Cheese Crispers Supplies

Ingredients:
12 chicken thigh skins
3 chicken thighs
¼ cup celery, diced
2 tablespoons blue cheese, crumbled
¼ cup buffalo-flavored hot sauce

Tools used:
Parchment paper
Butcher’s String
2 Baking sheets
Bowl
Piping Bag

How to make Baked Buffalo Chicken Blue Cheese Crispers

1. Remove skin from chicken thighs, leaving whole.

2. Preheat oven to 250 degrees F.

3. Place 3 chicken thighs, skins removed, onto one of the baking sheets.

4. Cut parchment paper into 6 8×8 inch sheets. Roll each sheet into an 8-inch long tube. Wrap 2 chicken skins around each parchment paper tube.

5. Tie each chicken skin with butcher’s string.

6. Bake for 10 minutes, then flip and increase oven temp to 450 degrees F.

7. Add chicken thighs to the oven and bake chicken skins and chicken thighs for 10 minutes, or until skin is crispy and chicken thighs reach an internal temperature of 165 degrees F.

8. Remove baking sheet from oven and allow to cool.

9. In a mixing bowl or on a cutting board, shred chicken thighs.

10. Chop celery into small pieces.

11. Cut blue cheese into small crumbles.

12. Add shredded chicken to a bowl and pour in the hot sauce.  Mix until combined.

13.  Add in the celery and blue cheese and mix gently.

14. Gently remove the string from the chicken skins, then carefully remove the parchment paper by twisting the paper and giving it a pull. Be very careful not to crush the chicken skins.

15. Fill a piping bag with the chicken mixture.  Pipe chicken mixture into chicken skins and serve.

Top with a drizzle of wing sauce and blue cheese crumbles if you’d like. Serve with celery sticks, ranch dressing, blue cheese dressing and/or wing sauce on the side.
