Hearty One Pot Chili Recipe

Chili is one of those meals that warms you up from the inside out. Check out this scrumptiously simple Hearty One Pot Chili Recipe. Cooks great on the stove top or in your Instant Pot!

Well, we have made it.  Destination?  Bone chilling freezing temperatures that can only be found during the extreme doldrums of winter in the Northeast.  Every year I think I convince myself a little more that I am going to winter in the south when I get older.  And the older I get, the more and more I actually believe myself.

So while, for at least the foreseeable future, I am stuck here enduring harsh Pennsylvania winters, at least we can make some delicious meals that are as hearty as they are tasty.

Take, for example, today’s UNBELIEVABLY simple and yummy chili recipe.  This one is SO good you guys. It is also very easy to make and only uses one pot.  (And let’s face it – it’s always nice to be able to cut down on dirty dishes.) This chili recipe freezes great, so you can certainly make it in bigger batches and freeze portions of it for later. I typically make this chili in my Instant Pot.  I start on saute mode and once the meat is browned and all of the ingredients are added and brought to a boil, I change it to slow cooker mode.

Ingredients

  • 1 lb lean ground beef
  • 1 onion chopped
  • 2 cloves garlic minced
  • 28 oz crushed tomatoes
  • 1/4 c red wine vinegar
  • 1 tbsp chili powder
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp salt

Instructions

  • Saute ground beef in pot until browned. Drain fat, return to heat.
  • Add garlic and onions to pot. 
  • Season meat with all remaining ingredients.
  • Stir and bring to a boil.
  • Reduce heat, cover and simmer for 1 hour.  (If using an Instant Pot, change modes from Saute to Slow Cook.)
  • To make this chili even heartier, you can add some canned black beans and/or kidney beans.

We make this recipe often during the winter months.  Sometimes we use ground turkey instead of ground beef and the results are still just as incredibly tasty. Our other favorite chili recipe has three different kinds of beans in it.  It is a great vegetarian chili, or you can add beef or turkey to that recipe if you prefer.
