It doesn’t seem to matter what time of year the calendar says we’re in – we rarely get a break from a very busy schedule. It could be fall with back to school in full swing, or winter with the holiday merriment all around, or the end of the school year right on into an activity-filled summer… Now that both of my kids are old enough to attend school and participate in various sports, we spend many nights picking up from dance class or sitting on the ball field or watching horseback riding at the farm.

Whether we are dashing off to car line in the morning or heading out for the evening, most of our kid chauffeuring takes place right over mealtime.  Car meals are often our reality and there are many days when I pack food for the kids to eat while we’re en route to the next activity.

One of their favorites are these Country Fried Steak Corn Muffins that I made for the first time a few weeks ago!  They love the taste and I have to tell you, they are so easy to make, it’s almost laughable. I can whip up a batch of these muffins in the time it takes Lily to get her dance or riding clothes on.  They bake in just 20 minutes, which I can knock out during homework time.

This easy muffin recipe uses the Family Size Country Fried Steak With Gravy that I picked up at Sam’s Club. Then I also used a corn muffin mix.

While the oven preheated to 400 F, I took 2 of these steaks out of their bag and let them sit for a few minutes on the cutting board to let them thaw a little. These steaks are fully cooked which makes them perfect for this recipe! I cut the steaks into squares, approximately 1×1 inch squares.

I followed the ingredients on the corn muffin mix and added 1 egg and some water to the baking mix.  After the batter was mixed and ready, I used non-stick cooking spray to grease our silicone baking cups.

Place one scoop of batter in the bottom of each muffin cup.  Then stick one piece of steak on top of that batter. Top each muffin cup with one more scoop of batter so that the piece of steak is completely covered.

Place the muffin tray in the oven for about 20 minutes.  You want to let them bake until they are just starting to brown on the top and an inserted fork comes out clean. Let the muffins cool, either in the tray or on a cooling rack.  They can be eaten immediately OR you can pop them into a freezer bag and freeze the lot of them.  When the next busy day strikes, smile a little easier knowing that you can have a quick and tasty meal or snack ready after just a minute in the microwave!

When we have time and I’m not too concerned about possible messes, I will offer the kids various dipping sauce options including the Country Gravy Mix that comes with these steaks.  Other favorite sauces that my kids request are BBQ, ketchup or honey.

This is such a fun spin on traditional Country Fried Steaks, though my family loves the original version just as much. One of our favorite family dinners is Fast Fixin’ Country Fried Steak topped with Gravy Sauce, along with some sides (our vote is mashed potatoes and green bean casserole)!
