I enjoyed this delicious lunch yesterday! It was super easy to prepare and really filling and oh yes, DELICIOUS!
If you are following 21 Day Fix, this lunch uses all Fix-approved foods and can be counted as: 1-3 green (depends on how much squash you use), 1 red, 1 yellow
Cook up the quinoa (takes 20 minutes or so on the stove top) while you sauté the squash in a skillet. I used one yellow squash and one zucchini, and sautéed them with a little non-stick cooking spray.
As I combined the squash and quinoa in a bowl, I tossed the sliced chicken sausage into the hot skillet to heat it up.
The chicken sausage topped my bowl and I dug into an incredible lunch!!
