President’s Day has long been recognized as a holiday weekend (read: no school Monday for the kiddies) and also as a day when I never remember that the post office is closed until I check my (empty) mailbox.  Of course, there is another “event” that traditionally takes place at retailers nationwide (both in stores AND online) during this holiday weekend.  Yes, those President’s Day Weekend Sales that seem to bombard your email inbox throughout the first couple weeks of February.

But is there any truth to this?

How to Make Leprechaun Cookies | St. Patrick’s Day Leprechaun Trick

Whether you find yourself looking for a fun leprechaun trick to play on the kiddos, or simply want to create a super awesome holiday themed dessert for your St. Patrick’s Day party, these Leprechaun Cookies are JUST the ticket!  They are so easy to make, are very budget friendly and look fantastic!

I first set out to make these “golden” cookies using Nilla wafers.  While the end result was just fine and dandy, they lacked the WOW factor that I was seeking because, well, those cookies are already pretty gold in color.  I had a pack of chocolate sandwich cookies in the pantry and decided to try those (I used ALDI brand – OREO cookies or anything similar would work.)  This type of cookie worked MUCH better!

You only need 2 things to make Leprechaun Cookies: a pack of cookies and a can of Wilton Gold Color Mist.  I picked up some small glittery Irish hats at the dollar store to serve the cookies in… those small plastic black treasure pots (ie end of the rainbow) would work great too.

Leprechaun Cookie Ingredients

Arrange cookies in a single layer on parchment or wax paper.  Spray one side of the cookies until they are the shade of gold that you desire.  Flip cookies over and repeat this procedure.

Crock Pot Lasagna Slow Cooker Recipe

Did you know that you can make a delicious, hearty lasagna in your trusty old slow cooker?  You can!  I’m talking about minimal prep and letting your crock pot do most of the work!  We like making this Crock Pot Lasagna for dinner and bonus – it always makes PLENTY of leftovers.

We used lean ground turkey in this version.  Other meats would work as well (including beef or sausage) – whatever you have on hand.

1 pound lean ground turkey
1 medium onion, chopped
1 jar pasta sauce
3-5 fresh basil leaves, chopped
1/2 teaspoon salt
2 Cups shredded mozzarella cheese
1 Cup shredded Parmesan cheese
15 oz part-skim ricotta cheese
1 package uncooked lasagna noodles (about 15 noodles)
